Tostones with Crab in Red Sauce

  • 1 lb Chiquita Tostones (Green Plantains)
  • 1/4 lbs crabmeat, flaked
  • 4 ripe tomatoes
  • 3 tbsp olive oil
  • 1/2 cup onion, chopped
  • 1 garlic, minced
  • 1/4 cup parsley, chopped
  • 1/4 tsp thyme
  • 1/4 cup white wine
  • 1/4 cup clam juice
  • Salt and Pepper to taste


  1. Pre-heat the oil in a pan and add onion and parsley. 

  2. Add the garlic, dried thyme and the crabmeat and cook for 2 minutes, then add the wine and clam juice. 

  3. When the wine cooks off add the crushed tomatoes and cook for 25-30 minutes, to reduce the liquid, stirring occasionally. Season to taste with salt and pepper. 

  4. Fry or bake the tostones following the instructions on the package and serve them as a side for the crab.
